Could you please suggest some op amps for designing UV sensors and give some guidance on how to design a good low noise EMC compatible UV sensor?

There is a vast array of sensors for optical or UV sensing that it would be impossible to recommend an interface solution without the specific details of the sensor itself. I highly recommend you take a look at our Photodiode Wizard design tool.
