Automotive has very specific requirements especially around EMI/EMC performance. Cable thickness and weight are also a major factor for automotive. Latency is also a key requirement for automotive and therefore heavier compression solutions are to be avoided. Even for Ethernet connectivity in the vehicle new standards were developed and did not consider CAT5e cables as a viable option and instead also went with UTP cabling. Given all of these using AV1 codec with CAT5e does not look like a viable solution for automotive.
