Does the SNR matter much when you use active wire shielding?

Comparing different ADCs it seems that the common mode rejection ration for differential ADCs play a big role in the price... I plan on using active shielding on my wiring which according to my research seems to do a great job of blocking EMI noise, assuming I successfully eliminate the EMI noise from my wires, should I really be worried about choosing the most expensive ADC that has the highest CMRR? are their other noises I should be worried about? my application is to collect bio signals and will be using a precision ADC with possible preamplification & low pass filter in front of the ADC. I'm new to all this and would really appreciate your input.
