If we purchase the ADVR 9361 2x2, can we only use one of the RX/TX pairs without affecting overall performance?
If you only need 1x1 Tx, Rx maybe it's cheaper to buy the ADVR9364-Z7020.
If you need the bigger FPGA but only 1x1, you can terminate or turn off the other channels.
We did buy two 1x1 boards. We are unable to use them in the normal flow because ALL the documentation and examples seem to require the 2x2 board. We are planing to buy the 2x2 board so we can move forward.
That is just because 1x1 is a subset of 2x2. The entire system works the same way on both 1x1 and 2x2 modes.
It should not be the only reason to switch, I would suggest you try things first and if there are issues let us know.
Yes, the HW in the 2x2 may be 2 copies of the 1x1 but unfortunately, these are SOMs. The Xilinx Zynq chips are different between the 2 boards. The information in the SD card boot file needs to be different so the examples dont seem to work for the 1x1 card. The SD card that comes with the FMC larger carrier card WILL NOT work with the 1x1 ADVR9364. You need the 2x2 for that.
Well to answer your question you can use the only a subset of the ADRV9361 without a degradation in performance. If that is the only thing you are worried about, then you should be ok to move forward.
As far as development goes, the current selections for carrier card are the FMC carrier or the breakout board. It all depends on what you are trying to do.

You are mixing up the SOM with a full system. The SOM part doesn't care about what the carrier is --
It works the same way as 2x2/1x1 (in fact everything related to it -- the digital interface, core & drivers are the same).
So if your concern is only with 1x1, SOM1 (9364-SOM) is all you need.
Beyond this, if you are looking for more functions (such as HDMI, camera, GTX and so forth) -- you need to switch to the 2x2 one (9361-SOM). However these functions do not have anything to do with AD9361/AD9364 itself.
@Charly, We have purchased both the FMC carrier and the BOB breakout board. Neither one will work with the ADRV9364 out of the box we received from AD. They will not run Matlab demos for us with the included SD card. The FMC Carrier will not output to the HDMI.
We are trying to get up and going quickly running Matlab and Simulink demos.
Can you verify in real hardware that this will work for you with a freshly shipping FMC carrier and ADRV9364?
