J2/J3 on the HSC-ADC-EVALC card are 40-pin connectors while P601/P602 on the AD9634 eval card are 60-pin.

Could you please attach a photo of the two boards you have? The AD9634 board mates to the EVALCZ capture card. They should both have the Tyco connectors on them.
I haven’t received these kits yet, so I’m basing my questions on what I see in the HSC-ADC-EVALC manual (schematic) and the AD9634 Eval schematic. I have confirmed via the Tyco Z-PACK HM-Zd catalog that the 6469169-1 connector on the AD9634 Eval board does mate with the 6469028-1 connector on the HSC-ADC-EVALC board.
However, the I/O is still not totally clear to me. It looks like the P601 connector on the AD9634 Eval board contains the SPI/USB signals that mates to the J1 connector on the HSC-ADC-EVALC board, and the P602 connector passes the A/D signals to the J2 connector on the HSC-ADC-EVALC board. Also, I assume the A/D interface on the HSC-ADC-EVALC board is capable of receiving double data rate (DDR) samples. Are these assumptions correct?
Your assumptions are correct. P601 mates to J1 and P602 mates to J2. The AD9634 does indeed output data in DDR format.
