Can someone tell me what happens when register 0x30 is set to 0x0A? Bit numbers [7:3] in the register set ED/HD standard but there is nothing listed for 00001. It starts at 00000 and goes to 00010 skipping 00001.

The missing value in the table does not implement any additional/different video standard. Only the values quotes in the register table should be used in your configuration settings.
I have a design that uses that value for 3 resolutions (640x480 VGA, 800x600 SVGA, and 1024x768 XGA) but uses another setting for a fourth resolution (1280x720). The table doesn't indicate a value for the first 3 resolutions since they are not ED/HD standards. They are VGA standards. What value should be used for the VGA resolutions.
The following are the values I currently set. The other registers use default values.
Unfortunately, the ADV7343 does not support any VGA standards. A list of the supported video resolutions is shown below:
