ADAU1361 or ADAU1761 can be used as PDM to I2S converter?
Yes they can. They have to be run in Master Mode for the I2S. So there are some limitations but you can do this.
Another option is the ADAU1372. It has four channels (two data streams) of digital mics that can be processed. The advantage of this part is that the PDM mics can run on their own clock domain and the I2S can be on its own clock domain. There are ASRCs on-chip to translate to a different sample rate. It can run as a master but only at multiples of the master clock, or it can operate as a slave. When operating as a slave it will automatically adapt to any sample rate and does not need to be on the same clock domain. So the digital mics can use the crystal attached to the ADAU1372 and run on its own domain. Then another part in the system can send BCLK and LRCLK to the ADAU1372 and it will simply follow that sample rate. There are some limitations to how far it can adjust to the incoming rate but it is basically 8X or X/8 roughly.
Another option, if all you need to do is convert PDM to I2S (with no processing), is the ADAU7002. It can only act as an I2S slave, but it is the most bare-bones solution for converting PDM to I2S.
