What gyroscope (MEMS) would be suitable for detecting the tiny movements of an inland ship?

We don't typically make broad, application-level recommendations, as MEMS technology is still maturing and each application tends to present its own unique needs and opportunities to leverage other inputs. The application is to detect a ships angle (azimuth) in order to know the rotated angle.
Its for a stabilization system. It's quite difficult to interpret the exact needs and requirements as there are tiny movements and usually a lot of noise and zero-rate drift of the gyro sensor.
I understand where you are coming from. In cases like this, I tend to recommend starting with the best performance in early trials, then once feasibility and adequate performance are validated, use that platform to explore opportunity to optimize the size/cost vs performance trade space. With that in mind, I would recommend starting with the ADIS16490.
