If I have 100Kohm connected to VIN-. how do I calculate the output current and voltage...?
AD590 acts as a constant current regulator, which output will be temperature dependent: 1 uA/K. If you connect a 100K resistor from the AD590's negative pin to ground, similar to figure 10 on the datasheet, you will get a voltage drop across such resistor dependent on the temperature:
Vr=I*R=1uA/K*100kOhm=100 mV/K, i.e. there will be a voltage drop of 29.5V at 25C, which is impossible, as that is bigger than your supply problably. So, I would recomend to use an smaller resistor, around 1K, so you will have 1mV/K voltage drop across it.
