Why are some digital potentiometers' maximum operating temperature only 85°C instead of the extended 125°C?
The NVM performance is proportional to the temperature of operation. The performance is defined by the endurance and the data retention.
Endurance- This specification defines the maximum write cycles that can be done in the memory before the first fail is detected.
Typical minimum numbers are:
100k cycles @ 85°C
700k cycles @ 25°C
Data retention- This specification defines the maximum time that the data will be retained over the time before needs to be refreshed again.

In conclusion, the maximum temperature is +85°C to allow a good overall performance without compromise the final specifications.
