Where I work we use PIC microcontrollers and our PIC-C compiler is by Custom Computer Services (CCS). Your application appears similar to that discussed at Need help with dynamic programming basics ADAU1702, thus the info presented there may be helpful to you.
I have done similar things with a ADuC834 long ago with the first Sigma-DSP, today I would use a ADuC7023 in smallest package, having in addition some precision ADC for house-keeping.

If it is for your personal use, then controlling the parameters using the SigmaStudio is the best option.
However, if it is for the end user, then it is best if you can develop a UI of some kind since Analog has not yet released the much awaited UI tool.
For a hardware-only option, you will need an incremental rotary encoder preferably with a (in-built) switch and an LCD/OLED display at best as a minimum interface with the uC
