I've looked through the datasheet but I did not see a number for the wiper temperature coefficient.

It is noted that "The wiper resistance, RW, is a function of Vdd and temperature. Contrary to the temperature coefficient of the Rab, which is only 35 ppm/°C, the temperature coefficient of the wiper resistance is significantly higher because the wiper resistance doubles from 25°C to 125°C."

Is there a graph that depicts this 'doubling'? Is it linear, exponential?

Please refer to figures 11 and 12 of the data sheet.

The wiper consists of multiple internal switches. the end-to-end resistance is typically 35ppm/C but the switch's temperature coefficient is much higher. At codes higher than quarter scale, the temperature coefficient is relatively low but at codes lower than the quarter scale, the switches start to dominate and the temperature coefficient is significantly worse.
