Developing sensor system using analog microcontroller evaluation board

I am a graduate student working with biosensors. Our team has developed a biosensor whose output is a low amplitude signal ( in the range of uA or uV ). When a bias of 0.1v is applied across the sensor, there is an output signal in the above said range. So we want to detect this sensor output signal and process it. We want to develop a fully functional sensor system with signal conditioning unit, A/D converter, microcontroller and other standard interfaces and connectors.

I would like to know if ADuCM360x or ADuC706x evaluation board can be useful for developing this sensor system. The output signal can be amplified to meet the full scale range of the device (maybe upto several mV).
