Where can I find example course and lab materials written for Analog Discovery?
A useful first place to start would be searching the Web. In my experience Google Search seems to find the latest, newest stuff first before other search engines, but I could be wrong.
Use keywords starting with:"Analog Discovery" (the quotes ensures you only get hits when they are adjacent)and / or:CircuitsElectronicsLab activitiesLab materialCourse material
You might find materials from Colleges and Universities that are early adopters and have posted class materials that are open to those outside their University.

Analog Devices has also posted a number of example Labs and other support material on the Wiki site:
This is the table of contents for the example Electronics I, II labs that have been developed. At the bottom of that page is a link to the eBook Text to go along with the labs.
It, along with the labs, is still very much a work in progress with the hope that we might get input on improvements from users.
This next link is the main page for a motor-generator / solar panel based Energy and Power Systems board project.
All of this ADI supplied material is considered open source and free for any non-commercial educational use. The only requirement is that any derivative material continue to retain the attribution to Analog Devices Inc.
On the Digilent web site they have the Circuits I course materials ( created in collaboration with ADI ) something they call Real Analog: http://www.digilentinc.com/Classroom/RealAnalog/
Digilent has also put up a number of YouTube quickstart videos on getting up and running with Analog Discovery. To find them just search for "Analog Discovery Quickstart video".
Virgina Tech has put together a number of introductory slides on installing WaveForms and using Analog Discovery that you might find useful:
They were produced awhile ago and the screen shots are from early versions of the Waveforms software so they are not up to date with how the current version looks.
