The data sheet says the supply should be 5V, but the schematic for the eval board shows 3.3V. Does this part work correctly at 3.3V?
the part is operational at 3.3V but the specs are not guaranteed.

Why does the eval board work at that voltage? Surely you'd want to show the part off to its best advantage?
Are the inputs 5V tolerant if run with Vdd=3.3V?
You can power the board externally for better performance.
The digital inputs are internally protected so max voltage is Vdd + 0.3V
