The 21489 is a very capable processor. It doesn't have any built-in ADC/DAC codec hardware, so the limitations are hard to define in this regard. It would depend on the efficiency of the algorithm being used to process the data, quality of audio in/out, etc. As I mentioned previously, the Dolby NeoX Decoder software module can handle up to 11.1 channels of audio decoding, so that is an example of the 21489 easily handling more than the 5.1/7.1 audio you are looking for.
Is your question regarding the physical interfaces of the EZ-KIT, capabilities of the processor, etc?
The EZ-KIT hardware has 4 stereo out and 2 stereo in, however there is also an Audio EZ-Extender daughter board available for the EZ-KIT that provides 24 channels of analog audio out with 12 channels of audio out. You can access the SHARC Evaluation KITs here, with the manual available here.
