I have just bought the adxl 345 breakout board. How could I start? What microcontroller could I use to monitor it and program it? What software could I use to program it through a microcontroller? Thanks in advance!

There are a few options to get started. You're correct that you will need to connect the digital output to something for control and readback. This can be a microcontroller, FPGA or microprocessor.
