The AD8275 is a graded part - in the part name, AD8275ARMZ stands for the A grade, while AD8275BRMZ stands for the B grade. This is a standard naming configuration, so it will apply to graded parts that you encounter in the future.
In general, the grades differ in terms of performance. B grades are generally guaranteed to have higher performance than the A grades. However, this usually applies to certain parameters only. In the case of the AD8275, the difference is that the B grade has smaller offset, higher CMRR. B grades also have settling time and drift over temperature guaranteed.
You could take a look at page 3 of the datasheet, you will find that there are separate columns for the specifications of the two grades, and you could compare performance from there. What you use will ultimately depend on your application. If you need more precision, I would recommend you use the AD8275BRMZ.
For your second question, unfortunately we don't have evaluation boards for difference amplifiers. However, the AD8275 follows the standard op-amp pinout configuration, so it might be possible to use generic breakout boards with this pinout. You will need access to pins 1, 5, and 8 though. These pins are generally NC on op-amps. If you wind up using a generic breakout board, attention needs to be paid to whether you can access the said pins as they are necessary for diff amp configuration.
