Is there any available material on how to implement an FSK demodulator using ADALM2000 ?

There are no specific materials from ADI on how to do FSK demod, but many communicatons textbooks should cover this topic. In short, with a purely real signal FSK demod can be done by:

v_out = LPF{ v_in(t)*v_in(t-k) }

where v_in is the input voltage from some pin and k is an integer delay less than the number of samples per bit. You will need to low pass filter the output to remove the double frequency term, but the output will reconstruct the amplitude of the previously modulated signal.

MATLAB also has built in frequency demodulators with the related doc on how they function.
