Using ESD protective Mat

Hi, I'm going to work with DACs and DDS (AD9914 , AD9912, AD9122) , i am wondering to know if buying a ESD mat it would be extremely necessary to protect the device during manipulation. Aren't they have ESD protection built in?. Which is the critical moment that the device are more sensitive to an ESD? , I mean, for instance, when i am manipulating them during the soldering process, or , if they have already been soldered to the PCB, they don't need to be manipulated using the ESD mat.
