When connecting the ADV7511W TMDS output to any state-of-the-art television set, is it possible without using HDCP to display video up to 1080p and audio up to 8 channels @ 48 kHz?
The ADV7511W is capable of transmitted 1080p with full audio to any sink (TV) which is capable of accepting that data. This is normally determined when the ADV7511W has a 'hot plug detect' indicating that a monitor has been connected. At this time, the ADV7511W will read the EDID of the TV, passing this onto software which can parse the EDID information to determine what the highest compatible mode is for the pair.
The use of HDCP is entirely under the control of the source (ADV7511W). If you do not wish to use HDCP, then you don't have to select it.
The use of audio is confined to HDMI operation, and in your earlier post you indicated a desire to run DVI, not HDMI. If you transmit as DVI, there is no audio contained in that transmission. If, on the other hand, you are running HDMI, then the ADV7511W is able to transmit 8 channels of PCM audio at rates from 32KHz up to 192KHz.
