The ECG and Bio-Impedance channels can be sampled simultaneously because of their dedicated channels and ADC's, however there will be delays when the user obtains the data. This is because there are different delays in each channel due to latency from the filters, the decimation ratio and sample rates, and the fact that the two different samples are stored in separate registers meaning you can only read one out at a time. While this means there will be delays between when the ECG and BioZ samples are taken, the device can simultaneously sample each channel.
