So you need a boost converter that can regulate the output voltage (CV mode) at 60V and regulate the output current (CC mode) when the output voltage drops below the programmed value. That limits the part selection greatly and the LT8361 won't be easy to work…

LT8710 input voltage is up until 80V so may not be good choice.
