ADA4627-1 and ADA4637-1 have NULL pins which are offset adjust pins. If I do not plan to use offset adjust what should I do with the NULL pins? Leave it floating or use 100k Ohm pull-up resistors?

You have another problem: The ADA4637 is only stable with a noise gain greater than five.
AD8610 is only specified to operate in a maximum supply voltage of ±13V. Above that, the part will be damaged. If you need ADI part with more than ±13V supply, then you may use ADA4627-1/ADA4637-1 which can go as high as ±18V.
