Is it safe to connect pin 6 (GPIO1) of the 10-WAY MICRO-MATCHCONNECTOR of USB-SDP-CABLEZ to GND?

Try to avoid doing that if you can. GPIO1 is connected directly to the FT2232 FTDI chip inside the CABLEZ. Best case, it will be tri-stated with a weak pull-up. Worst case it will try to drive a logic HIGH direct to GND.
