This depends upon your end application.

Number of Bit is a tradeoff between SNR and Power consumption requirements.

Sorry, I should correct my question.
AD9371 should usually be used on 5G RU.
Why AD9371 need 16 bits ADC and 14 bits DAC for 5G RU application?
If AD9371 use low resolution ADC/DAC, what problem will be caused by lower SNR?

What is your requirement of number of bits for your application ?
AD9371 is a general purpose transceiver used for different applications like Communication, aerospace and Defense , Instrumentation , Video transmission , and even hobbyist.
Since this is an integrated transceiver and not just ADC , you should look at noise figure for your system calculations.
