There is nothing to stop you from cascading 2-3 MAX2678 amplifiers, but this will result in a significant amount of gain in one place. You need to decide what input referred compression and IP3 levels you need to achieve. Perform a cascade analysis to ensure these requirements can be met. Additionally, in your board design, be cautious about leakage from the output of the last amp to the input of the first amp as this can cause oscillation.
