If I want to use an output single ended, would I use the 'P' pin? If so, what do I do with the 'N' pin? 50 ohms to ground? Does the 'N' pin's impedance have to match the 'P' pin's impedance?

As long as P port load has reasonable return loss, it is fine. And, it is good idea to add a pad option on your PCB, in case you need to improve the match.
