This KWIK (Know-how With Integrated Knowledge) Circuit FAQ offers a step by step guide on how to model a Resistance Temperature Detector (RTD).

This sensor model enables SPICE simulation of the electrical and physical properties of an RTD. The SPICE model uses parameters which characterize the physical behavior of an RTD which translates temperature into electrical resistance. It also provides a typical excitation and signal conditioning circuit that can be used to demonstrate the behavior of the RTD model.
