Would it be possible to implement a ±70 V power supply using two LT8210s in series, powered by two isolated AC/DC PSUs? Or does Analog Devices offer a more suitable solution? Currents of up to 20 A should be possible, not continuously, but as a short-term peak current. For audio power amplifiers.
To address this directly, yes stacking two LT8210s is a valid approach for 70V. Each IC would only see 70V across so you are staying under 100V abs max.
That being said, I'd recommend looking at the LT8210‑1 instead. Same family and pinout, but the multiphase config would help you handle 20 A peak current better.
The closest eval board we have is the EVAL‑LT8210‑1‑AZ. It's a good schematic and compensation reference for your design, but not a drop‑in.
