For a PV application, I like to design a High Voltage, high Power DC-DC converter with 200 - 1.2kVDC in and 110VDC; 2,5Aout.
Can I use the LT3758 for it? Does anybody has other suggestions? Evalboards

No. The maximum input voltage of LT3758 is 100V.

I would look at a half bridge LLC. Unfortunately we don't have any LLC controllers.
Another option would be a phase shifted full bridge using the LTC3722.
Due to the high input voltage of 1200V and 250W output a bridge topology would be best because this will clamp the max Vds of the the fets close to 1200V.
You would also need to design a startup circuit to temporarily (10ms -100ms) supply a bias voltage (10V or 15V etc...) to the IC to get things running, then use an aux winding on the main transformer to take over and supply the bias power.
