Can the LT3797 be configured sot hat one of it's outputs is used as a simple buck regulator? Only 2 LED drivers needed, and wondering if the 3rd could be configured to step down the 24V input to a 5V output to power an RS422 interface?

You can use figures 11 to 13 of the data sheet as reference.
If your buck needs to have the same GND as the controller I would recommend using it in SEPIC mode instead
