I was considering using one of these linear regulators to power and LED. I was wondering if the SHDN pin reacted fast enough to act as a PWM input at, say, 100Hz.

Hi,
If you are referring to one application on the datasheet (page15).
This application for the part can't be used for a PWM input but only for a "Constant Brightness" of LED (Constant On/Off only).
