User guides UG6258 and UG6259 show writes to registers 0x062, 0x063 and 0x080. The datasheet does not have any information on these registers. What are they for?

The commands to registers 0x062 and 0x063 are to unlock the model and clear the 0x080 value. This causes the model checksum to fail and forces the chip to initialize all RAM from the NV values.
