I am searching for a signal conditioning IC that converts a PT1000 resistor
temperature value (RTD) signal to a proportional analog voltage (~ 0 to 3V).

We don’t have any device that provides an all analog RTD signal conditioning
solution. The ADT70 was such a device but is now obsolete. ADCs such as AD7713
or AD7793 are the recommended replacments.
24 bit sigma delta ADC which also provides the excitation and signal
conditioning for sensors such as RTDs. It is a complete analog front end for
low frequency measurement applications. So there is no direct successor to the
ADT70 as the type of functionality provided by this device can now be typically
built into the ADC.
