Sorry for the delay and any associated inconvenience.
The first thing to understand would be that 0-100Hz is a valuable frequency spectrum for an accelerometer, we can measure the earth's gravity at 0Hz, tilt at a few Hz and human movement around the 50Hz, so the accelerometer needs to be reliable at this frequency mirror to be reliable in many applications.
Related to this question, on the third page of the ADXL1002 datasheet there is a value called "Frequency Response 5% Bandwidth" which, as noted in the document, is the frequency at which we can expect a 5% deviation (device frequency magnitude response, dB) from the DC response due to approaching the MEMS sensor Q resonance gain value. (governed by the springs supporting the movable sensor mass) All this means that the response is expected to be flat between 0 and 100 Hz.
However, there are some limitations to the testing and measurement of the device response, as the mounting system that would hold the sensor during the vibration test does not allow for the amount of displacement that follows these working frequencies.
To summarize: You can expect a flat 0dB gain up to about 4.7 KHz, including the 0-100Hz frequency range, and it can be tricky to measure and therefore rigorously plot on the datasheet.
