If I wanted to drive a channel low from one side but then wanted to also have the option of driving that same output pin separately, would the drive current break the isolator, or does it have some kind of protection?

There won't be an issue driving the unidirectional isolator from its own output side. The datasheet says OUTA/B1&2 can sink and source up to 30mA of current without breaking.
