The EVAL-ADIN1100EBZ schematic can be used as a reference. Since the hybrid and termination resistors are internal, the only difference is in the MDI circuitry.
The MDI interface circuitry difference between the two devices is as follows:

The recommended MDI circuitry can be found in the ADIN1101 datasheet, page 16. Snapshot attached.

How about interfacing ADIN1101 using RMII with 10/100 Ethernet PHY, strapping, clocking,...?

You can refer to the EVAL-ADIN1100EBZ board as a reference to the MII connection with the ethernet PHY. Noting that the difference between the ADIN1100 and ADIN1101 is the MDI circuitry as illustrated above.
