  • This past spring, I came across this delicious Orange Creamsicle Salad, which was a huge hit at my family parties. 

    Ingredients

    • 6 ounces Orange Jell-O
    • 2 cups boiling water
    • 1 cup cold water
    • 6.8 ounces Vanilla Pudding
    • 8 ounces cream cheese (softened)
    • (2) 8-ounce container Cool Whip
    • 5 cups mini marshmallows
    • (4) 11-ounce cans of mandarin oranges (drained)

    Instructions

    • In a large bowl, add the jello powder and boiling water.  Whisk it together. Then, add the cold water and stir it in.
    • Put it in the fridge to cool for about 20 minutes.
    • Stir in the pudding powder and refrigerate for another 20 minutes until it sets.
    • Using an electric mixer, mix cream cheese until smooth
    • Add in the cream chees and cool whip and stir to combine.
    • Stir in the marshmallows and mandarin oranges.
    • Refrigerate for at least an hour.  Serve Chilled
  • Halo-halo is one of my all-time favorite summer dessert. Halo is to mix in English. This dessert is a mix of everything topped with milk, ice cream (in some cases) and ube and leche flan. 

    • 1 cup crushed or shaved ice
    • ¼ cup milk fresh or evaporated
    • 1 teaspoon sugar if needed
    • 1 teaspoon sweetened saba or plantain bananas
    • 1 teaspoon sweetened sweet potatoes
    • 1 teaspoon sweetened red munggo
    • 1 teaspoon sweetened beans
    • 1 teaspoon fresh of sweetened jack fruit
    • 1 teaspoon coconut strips or sweetened macapuno
    • 1 teaspoon coconut gel/nata
    • 1 teaspoon sago or tapioca pearls
    • 1 tablespoon leche flan topping
    • 1 tablespoon ube jam or 1 scoop of ube ice cream topping

    INSTRUCTIONS:

    1. Add a teaspoon of each of your selected ingredients to a tall glass.
    2. Add sugar if you want more sweetness.
    3. Put the shaved ice and pour the milk.
    4. Topped it with leche flan and ube jam.
    5. ENJOY. You mix it all before you eat. 

  • Aside from Halo-halo, my favorite summertime food is Mango Tapioca since it is mango season, and it is very easy to make. 

    Ingredients:

    • 2 pieces ripe mango
    • 1 packet All Purpose Cream, chilled
    • 1/3 cup Condensada
    • 1 1/2 cups 1 1/2 cup ice cold water
    • 1 cup cooked small sago

    Procedures:

    1. Purée 1 piece of mango and dice the other piece. Set side. (5mins)
    2. Combine All Purpose Cream with Condensada, mango purée and cold water. Mix well. (5mins)
    3. Place cooked sago and diced mango at the bottom of serving glasses. Pour well chilled mango and cream mixture. Serve immediately. (5mins)
  • This is interesting since it is my first time to see orange as an ingredient in a salad. I would love to try this! 



  • My favorite would be Mais Con Yelo, which means corn with ice. It has only a few ingredients, but it's really delicious and perfect for the hot weather during the summer.

    Ingredients:

    • Sweet corn (canned or Frozen)
    • Shaved ice
    • Sweetened condensed milk
    • Evaporated milk
    • White sugar
    • Scoops of ice cream (optional)


    Procedure:

    1. Add the sweet corn and shaved ice in a glass.
    2. Add the sugar, condensed milk, and evaporated milk (adjust according to taste) and stir with a spoon.
    3. Add scoops of ice cream (optional)
    4. Serve immediately.
  • One of my favorite summer dessert is 'Ice Scramble' or known as 'Iskrambol'. It is a cold and sweet treat perfect for the hot weather and very popular among kids.

    INGREDIENTS

    Ice Scramble Base:

    • 4 cups shaved ice
    • 1 cup skim powdered milk
    • ¼ cup wash sugar
    • ½ tsp banana extract
    • A drops of red/pink food color gel

    Toppings:

    • ¼ cup skim powdered milk
    • ¼ cup colored mini-marshmallows
    • 1 tbsp. colored sprinkles optional
    • 6 pcs. wafer sticks halves (optional)
    • 2 tbsp. chocolate syrup

    You also Need:

    • 6 pcs. 6oz. plastic cups
    • 6 pcs. mini-plastic spoons

    INSTRUCTIONS

    • First, prepare crushed or shaved ice at least 1 cup more as needed.
    • Crushed ice melts easily make sure to keep it in the freezer until needed.
    • A perfect vessel in mixing and storing Ice Scramble is an Ice Bucket, that’s the easy and right way to do it. (Note: If you have ice bucket you are lucky, use it when preparing this.)
    • In a mixing bowl with crushed/shaved ice, add skim milk and mix lightly but quickly as possible.
    • Add wash sugar, banana extract and food coloring and mix until well blended.
    • Ladle Ice Scramble into a plastic cup about half full, top with powdered milk and put another layer of ice scramble, top with powdered milk, marshmallows, sprinkles, wafer sticks and drizzle with chocolate syrup.
    • Serve immediately with a spoon or straw.
