You will have to give us more information.
Which processors?
Some have codecs some do not.
If latency is an important issue for your application then the ADAU1787, the ADAU1777, that ADAU1772 and the ADAU1797 are the processors you will need to be looking into and those are all designed to be low latency and so there are specs published with those details.
