Is it feasible to transition the pins mode from SPI functionality to GPIO after booting the DSP from SPI master?

All the SPI configurations will be cleared after coming out of booting. So, these pins will be in its default state i.e., GPIO. As a result, they can be utilized as GPIO or other peripherals in accordance with the desired application requirements.
