The P-Channel MOSFET shown in figure 1 of the datasheet is used to bypass the pull-up resistor. This additional circuitry can be used when many 1-Wire devices are on the same line to improve the recovery speed (more accurately time "ε" in the datasheet) of the 1-Wire line.
