Many of the examples I see of the ADA4807 seem to show it as a unity gain
buffer. Can it be used with gain?

Yes, ADA4807 is a low power, low noise operational amplifier and can be
configured for gain using the feedback and gain resistors.   In the unity gain
buffer configuration the ADA4807 achieves the lowest noise, distortion and
power as well as the highest bandwidth highlighting the maximum performance
achievable with this amplifier. If the situation warrants, the amplifier can
certainly be used with gain but note that the addition of feedback and gain
resistors will result in an increase to both power consumption and noise.
