What would cause the MAX6630MUT to read near 100°C instead of 25°C when the part's temperature is actually 25°C?

Eliminating the possibility that software is reading the data incorrectly, the most likely issue is ground is connected to the wrong pin. Incorrectly grounding the part often doesn't completely disable it but does present this behavior. This situation commonly occurs when one doesn't notice that the pinout for MAX6629 and MAX6630 is slightly different. Customers end up not connecting GND of the MAX6630, but instead have connected the NC pin to GND.​
Under normal conditions, having the NC pin connected to ground should probably be OK. However, if you somehow inadvertently got the part into a test mode, then signals are meant to come out of this pin, and having it grounded may damage the part. It would be best NOT to have the NC pin tied to ground.
