The Op Amp Selection section on page 16 of the datasheet outlines the consideration for choosing a suitable I-V opamp for the LTC2757. The main parameters you should check are input offset voltage, input bias current and open loop voltage gain. Zero-drift amplifiers have excellent offset and offset drift parameters. There shouldn't be a problem to use them with the LTC2757.
