You cannot change the input impedance of the MAX127 since this is a characteristic of the hardware. However, the sister part to the MAX127, the MAX128 does have a much larger input impedance and is functionally equivalent. This difference in input impedance can be seen in Figure 2 of the data sheet where R2 = 8.2kohm for the MAX127 or R2 = infinity for the MAX128.
