I would like to know if each channel of the AD7656-1 has trully a maximum speed of 250kSPS. And if this component will be still produced for 10 more years.

The 250 kSPS is achievable in Parallel interface of the device.
And roughly 209 kSPS when using the DOUT pins, A, B, and C during Serial Interface.
May I know your specific application?
As far as I know, there is still no plan in obsoleting AD7656-1. It is safe to say that it would still be produce for the succeeding years. On the other hand, here are some simultaneous SAR ADC products that have the same resolution. You might as well try looking into these products.
