Product Number: MAX11270
Data Sheet has several references tot he fact that the sinc filter can be turned on and off but there are no details on how to do this. How do I turn off the sinc filter so I can widen the bandwidth and get lower sample latency?
The references to it being controllable are:

When in continuous conversion mode, a SYNC or POR event inhibits output of the first 4 data values to allow for filter settling when the SINC filter is selected.
