As long as it does not violate the test conditions from its datasheet, the range of its specifications from the table, and the absolute maximum ratings that will work. But may I know the exact signal that will be produced? I would like to know also the voltage range, frequency, and your specific application.

So for the -IN we plan to ground it and for +IN - is it possible to input TTL +5V from an motor encoder using 1 channel only? Please see image below of the motor encoder. For the output we just want feedback for the speed

Yes. That is fine. But make sure that after your sensor, you will be using an Analog-Front-End (AFE) before the ADC. When driving the analog inputs with an op amp it is important that the op amp settles within the allowed time. And for the RC filter section, it should be chosen with a small resistor and large capacitor to prevent DC drops across the resistor.
