Hi,
We use FPGA to maximize speed and versatility and optimize performance. As of now, we haven't used or tested any microcontroller that has a higher capability in terms of speed.
I've seen some user uses the STM32 controller for the AD7381-4 but we haven't explored or tested this yet. I suggest you can check the link below and refer to github forum.
